Ah… Peanut Butter Kiss cookies…Did you know that Hershey Kisses contain dairy and gluten? That doesn’t mean we have to go without – we just have to substitute and tweak recipes a little.
These peanut butter kiss free cookies are so good they will fool your friends.
Peanut Butter “Kiss-Free” Cookies
Ingredients
- 1 cup natural peanut butter (I prefer Crazy Richard’s Peanut Butter)
- 1 brown sugar
- 1 flax egg (1 Tablespoon flax meal mixed with 3 Tablespoons warm water and set aside)
- 1 teaspoon vanilla
- ½ teaspoon baking soda
- Vegan and Gluten-Free chocolate chunks (I use Enjoy Life Mega Chunks)
Instructions
-
Preheat the oven to 350°F.
-
Mix together the ground flaxseed with the water to make your flaxseed egg and set aside.
-
In a medium bowl, mix the peanut butter, sugar, flaxseed egg, vanilla, and baking soda until well combined.
-
Scoop 1 tablespoon of the cookie dough, roll into a ball, and set about 1 inch apart onto ungreased baking sheets.
-
Bake for 9-10 minutes. Remove from oven, and immediately press a chocolate chunk (or three) into each cookie. Allow to cool completely; the chunk will harden as it cools.
-
Store in an airtight container on the counter for 3-4 days or in the fridge or freezer for longer storage.
