Sometimes you just want a quick and easy cookie. This four ingredient vegan gluten free pumpkin spice cookies tastes so good and takes little time to make!
Vegan gluten-free pumpkin spice cookies
- 1 box King Arthur Gluten-Free Cookie Mix
- 1 15 oz can of pumpkin puree
- 1 teaspoon pumpkin pie spice
- ¾ cup dairy free gluten free chocolate chunks
Preheat oven to 350. Line a cookie sheet with parchment paper.
In a large bowl, add the cookie mix, pumpkin (all but about 2 tablespoons or so, you don’t want the batter to be too wet), spice, and chocolate chunks. Stir to combine.
Drop by tablespoons onto the cookie sheet. Bake for anywhere from 14 to 30 minutes depending upon size of cookies. These will not spread as they bake – the shape they are when you put them into the oven is the shape they are when they leave the oven.
Let cookies rest in the pan for 5 minutes before moving them to wire racks to cool.
These get better as they sit for a little bit, they become more moist.
