Vegan Gluten Free Berry Mug Cake Recipe
Ingredients
- cup King Arthur Measure-for Measure GF flour
- 1.5 tablespoon olive oil
- 1.5 tablespoon brown sugar, packed
- 2 tablespoons plant-based milk
- ½ teaspoon baking powder
- ½ teaspoon pure vanilla extract
- 1/8 teaspoon salt
- 6-8 blueberries or mixed berries
Instructions

In a microwave/oven safe mug, mix the flour, sugar, and baking powder to remove any lumps.

Add the remainder of the ingredients (except the berries) and mix well.

Add the berries and mix to combine.

Microwave on high for 1.5 minutes (watch carefully as each microwave is different!)

Allow it to cool slightly and then enjoy immediately! Feel free to add dairy-free mice cream on top!
